A Saturday morning waking up without an alarm and lounging around has beenย something of a rarity recently. This morning I decided to make a breakfast that wasn’t a hurried 5 minute job, rushing so that I can catch my train to work, and thought I’d try what every fitness fanatic is raving about: protein pancakes! I found this recipe on line and it sounded so good I couldn’t wait to try it. With my PJs on, hair in an obsene pineapple on the top of my head, and pillow creases still firmly imprinted on my face, I got to work!

The recipie is so simple anyone could do it. You’ll need the following ingredients:

1-2 scoops protein of your choice – I used vanilla
3 egg whites
1/2 cup oats1 medium banana – the riper the better
1/2 cup blueberries
2 teaspoons baking powder

[You can substitue the blueberries if you’re not a fan of them, but low in fat and sodium and high in antioxidants and vitamin C, they’re the perfect superfood to include in your breakfast!]

Using a blender or food processor, throw in the oats and blend until they become a fine flour
Add the egg whites, banana, protein powder and baking powder and pulse until smooth and well mixed

Pour the mixture in to a bowl and stir in the blueberries

Use a non-stick pan and scoop out 2 tablespoons of mixture for every pancake

Cook on a very low heat for around 30 seconds, flip and cook for a further 30 seconds

Serve and enjoy while warm!

wpid-wp-1440238350834.jpegThis was my first attempt at protein pancakes & the ease of this recipe meant that they came out much better than I’d expected. You can add your choice of topping, keeping it as healthy as possible that is. Opt for some peanut butter, cinnamon or natural yoghurt.

These are perfect for breakfast if you have some extra time in the morning, but can serve as a great snack or post workout meal. Let me know how you get on!
